Salento is the high-heel on the boot known as Italia, a limestone outcropping dividing the Adriatic and Ionian seas. It includes the entire administrative area of Lecce, along with parts of Taranto and Brindisi, and is home to the famous red wine Salice Salentino.

The main red grapes grown in this area are Primitivo, Negroamaro and Malvasia Nero. Rosso IGT wines are often blended with Cabernet Sauvignon or Syrah. The region is furthermore known for its excellent Rosato wines, as well as being home to the white wine varieties Verdeca and Francavilla.
