Organic. 9 day skin fermentation on native yeasts and elevage in steel tank create a wine with modest skin fermented characteristics. Lockvogel means decoy. Michael Wenzel thinks this wine is one to lure conservative wine drinkers into the world of skin fermented wines. Bone dry. Their Philosophy To create wines with the least amount of intervention as possible. Wines stripped down to its basics: wholesome, exciting, provocative, living, sensual and pure. The vineyards are in Rust, situated on the western shore of lake Neusiedlersee in the wine-region Burgenland. The soil mainly consists of slate crystals, gneiss particles and quartz. No irrigation. Conversion to bio-organic-management in 2008. Selective hand-harvest. 90 % of the fruit was destemmed into open top fermentation tanks. 10 % remained whole clusters.. After a pre-fermentation soaking period of 2 days around 20 °C, the fermentation started with naturally occurring yeast. Following 7 days fermentation, employing careful hand-punching down of the skins once at the beginning, batches were drained after a total maceration time of 9 days and then transferred into a stainless steel tank. Malolactic fermentation began spontaneously in winter and was complete by spring. This wine was bottled unfiltered in February 2019. One sulfur-addition just before bottling: 20 mg/l. 100% Gelber Muskateller, the terpene quality of the grape lends itself well to skin contact. The soft fuzzy apricot pith like tannins fully complement the natural aromatics of the grape making it a wonderful, food friendly wine.
