Chenin Blanc from the Clos de Mailles vineyard. The vines are found on the highest point of this hillside vineyard on phthalite (siltstone) and shist soils.

The work in the vineyard and cellar follows the principles of natural winemaking, where plants are protected with herbal teas and the grapes are pressed gently to ferment on their native yeasts and to mature in used barrels undisturbed for 10 months on their fine lees. Unfiltered, unfined.

Covering 87 different AOCs, the Loire Valley is known for a fresh and fruity wine style, paired with crisp flavors. Some of the best known AOCs of France can be found in this region, including Sancerre, Chinon, Muscadet Sevre et Maine and Pouilly-Fume.

The region is dominated by the variety's Chenin Blanc, Sauvignon Blanc and Melon de Bourgogne ("Muscadet") for whites and by Cabernet Franc, Gamay and Pinot Noir for reds. Next to still wines, the Loire Valley is also the second-largest producer of sparkling wines in France.

The part of the Loire appellation known as "Middle Loire" is comprised of the Anjou and Saumur sub-appellations.

Within the Anjou wine region are many different appellation d'origine contrôlée (AOC), each one responsible for a broad spectrum of wines including reds, whites and rosé as well as sweet wines. The region produces more varied wine styles from different grape varieties than any other Loire Valley wine region.

The two main grape varieties of the Anjou are Chenin blanc, which is here sometimes referred to as Pineau de la Loire and Cabernet Franc. Chenin Blanc is made into dry, sweet and sparkling wine. Cabernet Franc is used mostly for rosé and still red wines.
