This is 100% Chardonnay from Grand Cru vines in Oger in the Cote de Blancs. The Chapuy estate has been family run for generations. They are committed not only to the history of Oger (a great uncle was Mayor of Oger after the French Revolution!) but to future generations and have been awarded the highest level of ecological certification given by the Ministry of Ecology of France. Cover crops are planted, plowing is with minimal intervention and often by draught horse, no insecticides are used and they are dedicated to preserving the natural flora and fauna of their environs. Vintage wines do not undergo malolactic fermentation and ferment in stainless steel before spending 5 years on the lees. After disgorgement the bottles spend up to 6 months resting before release. 4810 bottles produced in March 2016. Disgorged December 14th 2022. Dosage of 5 g/l.
