Tour Blanc Ugni Blanc Sables Fauves 2013
"Sauble Fauves" comes from the top of the Summertime parcel of vines. It is blended with the second press juice of the "Les Mille Fleur" bottling and the "Vielles Vignes" wines, which brings warmth and spice. Grapes are hand-harvested, macerated for 24 hours, and pressed slowly. The juice is fermented spontaneously with native yeasts from the vineyard. The wine is then aged for 48 months on the lees with no temperature controls. Unfined and unfiltered.
Single, double cordon, and short cordon, trellis trained, untopped, full grass cover, sheep grazed, use of only biodynamic and field sprays and plant macerations, mulching under vines, unploughed. The soils are clay, gravel, silt, and sand on marine fossil ferruginous sandstone over limestone and the climate is principally oceanic with prevailing winds from the Bay of Gascony (Atlantic), the Pyrenees, and a lesser dry continental influence from the Midi.
