Nicolas Suteau set out to turn his family's vineyards into more than what had been given to him. To find the authentic expression of his varieties and terroir, he had to convert the vineyards to organic production and reduce the use of sulfur to just a tiny addition before bottling. The other ingredients where already there: ancient Melon vines on stony sandy-silty soils with gneiss, amphibolite and leptynite inclusion.
Nicolas harvests at full maturity towards the end of September, spontaneous fermentation on native years and without the addition of sulfur. The wine then ages on its lees for six months and receives a tiny addition of sulfur just before bottling. The resulting Melon Arzur is a dense and complex wine of gold yellow color that boasts a complex nose of white and dried fruits with yeasty undertones. Full and soft with good length and well balanced.
