The Jezebel is a new cuvee from Tour Blanc that has been long in the making (i.e., this 2011 was just released in 2019.) The winemakers decided to make a wine 'sous voile', a method used in Jura to make Vin Jaune whereby the wine is aged oxidateively. Grapes are selected from different parcels, macerated for 24-48 hours, and pressed for fermentation in tank. The wine is then aged for six years "under the veil" of yeast which protects the wine from spoiling, but which also adds richness, depth, and color.
