Davide Spillare Rugoli Garganega 2020
The Rugoli is Davide Spillare's bottling of his 80 year old Garganega vines grown on a ancient pergola system in volcanic soils. It is farmed biodynamically, fermented with native yeast and aged in used oak. There is no fining, filtering or use of any sulphur additions for any of his wines.
Davide Spillare works about four hectares of his family's vineyards, right behind his house and winery in the village of Gambellara. An early apprentice to well-known natural wine scene pioneer Angiolino Maule, Davide readily adopted Maule's ideas for his parents' winery that at the time was still delivering their grapes to the local co-op.
Despite the lack of added sulfur, Davide's wines are always elegant and linear
