A mineral driven Sauvignon Blanc, all estate fruit, blended from four vineyard sites comprised of schist and gravel. It is a crisp style of Sauvignon with notes of dusky crushed stone and yellow apple. In the expert hands of Pepi Umathum, this is more reminiscent of Muscadet than the tropical or grassy renditions found frequently elsewhere in the world. The grapes are farmed organically with biodynamic principles, hand harvested and the Sauvignon Blanc is fermented and raised in stainless steel. Bone dry with fresh acidity.
