Candialle's flagship wine made from old vine Sangiovese grapes farmed organically and planted at super high density using an ancient trellis system. The Albarello or bush vine training system was once commonly used in Chianti but was lost when many vineyards mechanized. Jarkko and Josephin Peranen are dedicated to low impact vineyard work and minimal intervention and so adopted and adapted this old system to their vines, training them in a candelabra shape on wooden poles for ultimate air flow and moisture reduction. This bottling is extremely limited as only 5 barrels were made and comes from the Pli vineyard, their highest, at 1200 feet above sea level. The soil is called Galestro which is clay and schist with chunks of limestone and imparts power and depth to the wine. It was fermented with native yeast and spent 36 months in barrel and the remainder resting in bottle. It is a beautifully complex wine with notes of unadulterated cherry and a brilliant remarkable freshness.
