Folle Blanche —also known as Gros-Plant is the grape usually used in Cognac. However, in the hands of Domaine de la Bregeonnette, one of Muscadet's organic farming pioneers, it becomes something much more unique. Winemaker Stéphane Orieux grows their Folle Blanche on clay-loam and mica-schist, hand-harvests, and lets it rest six months on the lees in steel. The result is taut and saline, bright with lemon-lime and a bracing, thirst-sharpening acidity. Featherlight at 11.5%, it's made for oysters, a summer afternoon, or both.
