Grand Cru Blanc des Blancs from Oger, in Cote des Blancs. Chardonnay grown in chalky, limestone soils under an alluvial layer. To retain freshness, Chapuy keeps its wines in steel tank only and stops malolactic fermentation at the halfway point, resulting in an elegant champagne that's full of tension. A base wine of 2014 vintage with 30% Reserve wine. Bottled July 2015. Disgorged on March 1st 2023 with a dosage of 3 g/l. Wonderful acidity. Pastry, candied lemons, white peach and spice.
