Quentin Cailleau – A New Generation, A Singular Vision

After centuries of tradition in Anjou, there are those who honor the past—and those who rewrite it. Quentin Cailleau is doing both. Arriving at Le Sauveroy in 2018 after studying viticulture and oenology at ESA in Angers, Quentin brought with him more than just technical expertise. His global perspective, shaped by experiences in North and South America, Portugal, Spain, Hungary, and the Rhône Valley, gave him the foundation to approach winemaking with both curiosity and precision.

Rather than simply following in the footsteps of his predecessors, Quentin has redefined his family’s legacy by launching his own BIO-certified label, dedicated to just two wines: Patience Blanc (Chenin Blanc) and Patience Rouge (Cabernet Franc). These wines are not just expressions of the terroir but of a philosophy rooted in patience, restraint, and the pursuit of purity.

His work in the vineyard is as meticulous as his approach in the cellar. Organic conversion was just the beginning—he has also introduced nesting boxes to promote biodiversity, agroforestry projects to create wild zones, and a renewed focus on vinification in amphorae. The cellar has been reimagined, designed to support gentle, natural fermentations and extended lees aging, allowing each wine to evolve at its own pace.

The result? Precision-crafted, terroir-driven wines that capture the essence of Anjou with clarity and depth. His Chenin Blanc is chiseled, mineral, and textured, with layers of acidity and depth that demand time. His Cabernet Franc is pure and lifted, with fine-grained tannins and a refined aromatic profile that balances fruit, spice, and earth with effortless elegance.
