Stefan likes to use Welschriesling for its transparency, as it is not overly fruit driven and does not overpower the finer notes of terroir. This rendition of Welschriesling delivers terroir at its best. Nolens Volens means willy-nilly because the first time Stefan made this wine he had no working destemmer and so was improvising. He decided that utilizing whole cluster pressing was the best idea. in this vintage he left 10% of the juice to ferment on the skins while the other 80% went straight into used barrels. The vineyard, right on the border of Hungary, is pure schist densely planted at 1000 vines per hectare. The Welschriesling greatly profits from these very specific conditions that lend concentration and fine and subtle aromas.
