Joseph Van Remoortere worked at wineries around the world before returning home to the Loire to work with his father. In 2011 he converted their 4 hectares to organic farming. This is 100% Sauvignon Blanc from Menetou Salon where the vineyards are compounds of calcareous sediments of Kimmeridgian soil, clay-limestone slopes. There is an emphasis on meticulous farming, hand harvesting and fermentation on native yeasts with minimal sulfur used. The result is an expression of pure terroir with wonderful acidity and focus.
