A sip of Salomon Undhof's dry Riesling and you remember why there is an adage that Riesling is the most versatile food wine in the world.

Founded in 1792 after the secularization of monastic lands, Salomon Undhof has remained in the hands of the same family for over two centuries. The estate's home, a former Capuchin monastery known as Undhof (monastery on the wave), overlooks the Danube in Stein an der Donau. Salomon Undhof helped shape the course of Austrian wine history. Fritz Salomon pioneered estate bottling and dry, terroir-driven whites in the 1930s, introducing them to the U.S., while later generations transformed the property into Austria's first regional vinotheque and played key roles in creating the DAC and Erste Lage classifications. Today, ninth-generation twins Bert and Fanny Marie Salomon continue this legacy with a blend of tradition and innovation.

The estate farms 25 hectares of prime terraced vineyards split between Riesling, Gruner Veltliner, and a small plot of Gelber Traminer. Steep sites like Kogl and Pfaffenberg, rooted in ancient Urgestein (primary rock), produce Rieslings of razor-sharp minerality, while loess-rich vineyards such as Wachtberg and Lindberg give Grüner Veltliner its hallmark depth and structure. Sustainable farming is central to their philosophy: no herbicides, hand-tending on the terraces, cover crops for soil vitality, and even sheep's wool to deter deer, all in service of expressing each site's character as purely as possible.

In the cellar, the approach is equally restrained. Hand-harvested grapes ferment with indigenous yeasts and rest on fine lees in stainless steel or neutral casks to build texture while preserving the precision of the fruit. The resulting wines are celebrated for their clarity, mineral intensity, and ability to age with grace. From the electric tension of Riesling Ried Steiner Kogl to the layered elegance of Gruner Veltliner Ried Wachtberg Erste Lage, Salomon Undhof stands as a benchmark of the Kremstal DAC, rooted in history, yet vibrantly modern.
