Oger is one of Champagne's four Côte des Blancs Grand Crus, and the Chapuy family has farmed here since before Napoleon. Sisters Élodie and Aurore run the estate today with genuine ecological seriousness — HVE3 certified, cover-cropped, draft-horse plowed, no insecticides. The 2019 Blanc de Blancs skipped malolactic entirely, spent five years on the lees, then rested post-disgorgement. The result: pure, taut Chardonnay — citrus pith, wet stone and a long finish.
