This extraordinarily expressive Etna Bianco Superiore comed from the Di Pietro vineyard in Milo, and is one of 15 Etna wines to bear the appellation. Milo sits at 860 meters above sea level, inside a lava flow channel worn by the traverse of mankind over the centuries. Di Pietro sits high overlooking the sea of Taorminathe with densely planted bush-trained Carricante vines grown in volcanic sand, lapilli, and pumice on lava stone terraces. At the top of Di Pietro sits an ancient 19th-century Palmento or traditonal winemaking structure carved out of the rock, a site of breathtaking beauty. The wine undergoes whole-cluster pressing and native yeasts fermentation. It spends 12 months in large barrels with a light filtration at bottling and then 6 months in bottle. There is a brilliant golden hue to the wine and fantastic acidity. The citrus notes of lime are enlivened by hints of bergamot, linden, helichrysum, rock salt, and the unripe flowers of the thorny caper nestled on volcanic soil. An evocative and complex wine.
